Tapping season arrived early this year with a week of unseasonably warm weather in February. Luckily we caught wind that others were putting in their taps, so we kicked into high gear and got to it.
Last year's boiling set-up in a rimmed pan over the pellet stove was long and laborious, so this year Tim, Brian, and Elizabeth planned ahead and built a stove based on a model we saw during our adventure to Michigan. The children were responsible for chopping much of the firewood to keep the sap boiling.
Then came an unseasonably late snow (!), and the finished syrup was mixed into the snow to make snow cones. From the looks on the boys' faces, it was heavenly.
